The very best cuts of beef are traditionally used to prepare steaks. The length and degree of doneness depend on what each individual diner prefers. The shorter the preparation time, the more tender and juicy the meat is. Over time, a scale of doneness has developed which has 6 or 7 levels ranging from Raw to Well Done.

Steak: from Raw to Well Done

Raw – raw steaks are not of course sold. The meat is used as Carpaccio or steak tartare.

Blue rare – the meat is only briefly cooked, really only quickly placed over the heat for 30 seconds.

Rare – lightly cooked meat with a red centre, soft.

Medium rare - warm centre with a temperature of 55 °C and pink centre.

Medium – the very centre is still pink and the colour of the rest of meat blends into a grey-brown colour.

Medium well – the centre has a temperature of 65 °C and there is only a hint of pink, the meat is almost completely brown and is slowly losing is juiciness.

Well done – the last degree of doneness when the steak is completely cooked all the way through. The temperature of the centre is 71 °C, the meat is cooked through and the centre is grey-brown.

George Prime Steak in the Old Town prepares luxury steaks

You will find an oasis with the aroma of the perfectly-cooked delicious steak in the centre of the Old Town, in a place where they strive to ensure the very highest quality of the selected beef and careful preparation and presentation. Indulge yourself in a luxury experience in the modern surroundings of the George Prime Steak restaurant.

The beef used for steaks here comes from the American Midwest from a few carefully selected farms where animals are bred naturally. This of course has an impact on the quality of the meat and the steaks themselves. You get on your plate meat from an animal which was bred without hormones and antibiotics and which did not lead a stressful life.

When preparing steaks, it is important to leave the meat you have bought to age or mature – this being for a period of at least 30 days. Only then should it be used to prepare steaks. The George Prime Steak restaurant prepares its meat on a Montague Legend grill which sears the meat at a temperature of 650 °C, ensuring that all of the juices are retained and the meat gains a delicate buttery consistency.

The restaurant also offers other delicious dishes and drinks including a range of original cocktails and also has two private function rooms.
